I haven’t been making new things much lately – but for making my dad’s chili I was forced to substitute canned diced jalapenos for the usual canned diced green chilies. They were (obviously) hot and slightly overwhelmed the balance of flavors. It wasn’t a tragedy, but it wasn’t something I am eager to repeat…

Unlike another accidental substitution in the same chili recipe several years ago, when theCultFigure bought diced yellow tomatoes without realizing it. They turned out to be a wonderful substitute for red tomatoes that we both loved. Unfortunately, I’ve only ever seen the one brand of diced yellow tomatoes, Sun Roma, and they seem to have gone out of business at least 4 years ago. Sigh.
