This is the second in what may become a regular Monday series describing what I’ve cooked that was new in the past week. Last week I mostly made familiar dishes like tuna salad. The one new dish I tried turned out great:

Moroccan butternut squash and carrot stew, over quinoa. YUM! And, for those who may be interested, vegetarian. The recipe came from epicurious and I didn’t make any modifications to it. I think next time I would put in more diced tomatoes, if anything. But it was really spectacular as-is, and I’ll be making it again this Saturday.
